Vegetable Stock

Today I made vegetable stock from scratch. I’ve always wanted to do that. I’m going to use it in a baked potato soup recipe this week.
Here are all the vegetables that cooked for an hour and a half. I put in olive oil, onions with their skins, carrots, garlic, parsnips, celery, parsley, leeks, salt, and peppercorns. I bought most of that from the farmer’s market yesterday with my mom. It’s by my mom and dad’s house, so I went over there and we walked there.
The recipe is from the book Veganomicon. I highly recommend it. I made the BBQ Baked Tofu on Friday, and it was amazing!

It made 6 cups of stock. I put all the boiled vegetables outside in the compost container.

Kale Salad

Whole Foods has a kale salad that i love, but it’s $10 a pound. I think it is because of the pine nuts. They have a recipe on their site but they left out the pine nuts, dried cranberries, and tomatoes. So here is my version of what they sell at the store in Tempe.
The key to this salad is finely chopping the kale leaves. The finer they are, the more they will absorb the dressing and the easier they will be to eat.
Serves 6
* 2 bunches kale leaves, very finely chopped
* 1/4 cup extra virgin olive oil
* 1/4 cup freshly squeezed lemon juice
* 1 teaspoon chili powder
* 1/2 teaspoon sea salt
Place the kale leaves in a serving bowl. In a small bowl, whisk olive oil, lemon juice, chili powder and salt. Pour over kale and toss to combine well. Taste and adjust seasoning before serving.
To this I added pine nuts, dried cranberries and sliced grape tomatoes. I left out the chili powder, and put pepper on it instead. Just as good as the one from the store!

I also cleaned and organized my pans. I wish I had a before picture, but I forgot. Trust me, it is definitely an improvement!

My Migraine

Oh god! I fucking hate migraines. I went to bed last night and felt like shit. Woke up this morning and felt like shit. Slept until 1pm. I found a suggestion on the internet to put your feet in hot water and then something cold on your head and the back of your neck (to decrease the blood flow to your head). It really seemed to help. I actually felt decent enough to clean in the kitchen.

Coming to a Store Near Me
i bought some cloth napkins yesterday to use instead of paper ones. It is on my list of things to do as part of the Earth Peace Treaty Commitment Sheet I signed and mailed to Deer Park Monastery.
I also committed to walking or riding places within 5 miles of my house. So here I am on a trip to the store.

People in Peoria, AZ are not accustomed to seeing people with their own shopping carts and reusable bags. I have gotten more odd looks. I think they think I’m homeless. It’s pretty funny. Oh well. Cecilia tells me I’m saving the earth, so it is worth it.

cats’ new couch

we got a new couch last week and the cats have claimed it. well tuff and didier have. pickles and nu-kitty have’t gotten up on it yet. pickles is generally more skeptical about change and nu-kitty is too busy with killing and maiming lizzards and birds to give a shit about a couch. she’s a bad-ass, that nu.

i am in a weird cooking and blogging mood today. for months nothing! and then one day i am here posting pictures, rambling on, and cooking. i had two inspirations: the iphone (makes it easier to post the pictures) and alexis stewart (martha’s daughter, i was reading her blog the other day). i like how alexis cooks a bunch of stuff and takes pictures of it. you can find her at Whatever Radio Blog
i’ve listened to her radio show on sirius several times. she sounds like she can be very cunty, but i find her interesting. not as interesting as howard, but interesting. i can’t listen to her for very long like i can with howard.
so tonight i made cheese enchiladas (while listening to howard). they were a bit too spicy for me. i used the medium sauce and will get the mild next time. also i didn’t care for las palmas enchilada sauce. i prefer macayo’s. the store was out, so i was stuck with las palmas. better luck next time.
they look pretty though.
